Foodie Friday: Salsa Chicken & S'mores Pie


 Welcome back to Foodie Friday!  This week's post has picture overload, so I apologize in advance!  On Tuesday night, I made this Salsa Chicken in the crockpot - it was amazing!  There is a Facebook group that attracted new "likers" like I've never seen - they have over 1.2 million "likes"!  It is called Crock Pot Girls and started as a forum for them to post crockpot ideas - and then others started posting ideas.  So they are working on a website to be able to find all these wonderful and mom-tested and mom-approved recipes.  I definitely will look on there for more if they are as good as this one was!  And then we had S'mores Pie for dessert - rather sinful if you ask me!  Here are the recipes and some pictures to go along! ....

Crockpot Salsa Chicken:
8-10 boneless skinless chicken tenderloins (I think I actually had about 10-12)
1 jar salsa
corn
black beans
8 oz light cream cheese
1 can rotel
 ~Place all ingredients in the crockpot.  I put the chicken in frozen!
~Cook on low for 6-7 hours, or on high for 4-5 hours.
~Before you serve, shred the chicken and stir all ingredients.
~Serve on tortillas.  You can sprinkle some shredded cheese on it.  Or put avocado slices on it.  Or just eat alone - it was DELICIOUS! 
*I served with Mexican rice - great combo!

 S'mores Pie:
taken from a magazine - I think it came from Everyday with Rachel Ray
Ingredients:
1 pre-made pie crust (the recipe actually calls for you to make your own, but I find buying the pre-made crust to be MUCH more convenient)
2 cups chocolate pudding (I used the Jello kind)
7.5 oz jar marshmallow creme
Directions:
Unpackage the pre-made pie crust.  Fill with pudding and freeze for 15 minutes.  Top with marshmallow creme and broil to brown top.  (the broiling will also help the marshmallow creme melt and spread across the pie).  Serve!

 Not the prettiest, but I was about to scarf it down - here it is on my plate!
 And the girls were so cute playing after dinner - I just had to include a picture of them!  So cute.
